Method
- Heat oil in a pot over medium heat. Add onions and cook until translucent, then add garlic and cook until fragrant.
- Add the beef and cook until browned. Add peppers and cook until softened.
- Stir in tomato paste and cook for 1 minute. Add tomatoes and cook for a few minutes.
- Add flour and cook for 1 minute. Pour in beef broth and season with salt, pepper, cumin, and chili powder.
- Bring to a boil, reduce heat to low, cover, and simmer for 2 hours, stirring occasionally. Add water if needed.
- Once the meat is tender, serve warm, garnished with fresh cilantro.
Notes
For extra tender meat, let the stew simmer longer if time allows.
